Italian Stuffed Shells
*This is a pic before it was cooked - I forgot to take one of the 'finished' product - all hot and bubbly!*
Italian Stuffed Shells
This will make 2 9x13 sized pans
1 1/2 boxes of Jumbo Shells
2 26 oz Spaghetti Sauce
1 box Frozen Spinach
1 1/2 lbs Ground Beef
2 eggs
2 cups Shredded Cheese
Onion Powder, Garlic Powder, Salt, Pepper (and I add Italian Seasoning too!) - amts to your liking - I probably use 1/4 - 1/2 tsp each
1. Cook pasta, drain and set aside
2. Spread Spaghetti Sauce into base of each baking dish
3. Cook Frozen Spinach according to package
4. Brown Ground Beef. Drain, Rinse and Return to skillet
5. Add rest of Spaghetti Sauce and spices.
6. Stir in Spinach
7. Stir in eggs and 1 cup of Shredded Cheese (if making dairy free - omit this step)
8. Spoon meat into pasta shells and place in baking dishes
9. Sprinkle with remaining cup of cheese
10. Bake at 350* for 20-30 min

*I doubled this recipe when I made it last night - we enjoyed one pan for dinner and 3 more are in the freezer for future meals!
